For those of you that may not have a microwave, I included some tips for baking the muffins in the oven. You’d be surprised how good these quick and easy keto McMuffins taste.
I am seating here, my feet spread on my couch, green juice in one hand and a keto McMuffin staring at me, and my laptop on my lap. Okay, so where am I going with this? All I’m saying is, I don’t think you’d have it better than me right now because I am in PARADISE!
I have placed my green juice down so I can dig into this scrumptious keto McMuffin. Don’t hate me, I am just trying to give a mental picture of my current situation, which, tbh you can create for yourself if you follow this easy Keto McMuffin recipe I am about to share.
So What is a Keto McMuffin and Where did it come from?
McMuffin is a group of breakfast sandwiches sold by the global drive-through eatery chain Mcdonald’s. The Egg McMuffin is their signature sandwich, which was developed in 1972 by Herb Peterson to take after eggs Benedict, a classic American breakfast dish consisting of English muffins, ham, eggs, and hollandaise sauce.
Important tips to note when making this Keto McMuffin Recipe
- For the best results, you should have a microwave in your kitchen. If you don’t, it’s fine don’t panic, you can also prepare it in an oven. You just need a little more time if you decide to use the oven. However, here’s is my best recommendation for an Affordable and Durable Microwave that I think you should buy!

- If you need to make this recipe nut-free, use more flaxmeal (same amount) or coconut flour (half the amount).
- Always go by weight when adding ingredients, especially when making baked items. Cup measurements may vary depending on the product / brand.

Ingredients for the Keto McMuffin
The Muffin
- ¼ cup almond flour (25 g / 0.9 oz)
- ¼ cup flaxmeal (38 g / 1.3 oz)
- ¼ tsp baking soda
- 1 large egg, free-range or organic
- 2 Tbsp heavy whipping cream or coconut milk
- 2 Tbsp water
- ¼ cup grated cheddar cheese (28 g / 1 oz)
- Pinch salt
The Filling
- 2 large eggs, free-range or organic
- 1 Tbsp ghee
- 1 Tbsp butter or 2 Tbsp cream cheese for spreading
- 2 slices cheddar cheese or other hard type cheese (56 g / 2 oz)
- 1 tsp Dijon mustard or 2 tsp sugar-free ketchup (you can make your own)
- Salt and pepper to taste
- Optional: 2 cups greens (lettuce, kale, chard, spinach, watercress, etc.)
- Optional: 4 slices crisped up bacon or Pancetta
Instructions for making Keto McMuffins
- Place all the dry ingredients in a small bowl and combine well.
- Add the egg, cream, water and mix well using a fork.
- Grate the cheese and add it to the mixture. Combine well and place in single-serving ramekins.
- Microwave on high for 60-90 seconds.
- If you don’t have a microwave, I suggest you make 4-8 servings at once. Preheat the oven to 175 °C/ 350 °F and cook for about 12-15 minutes or until cooked in the center.
- Meanwhile, fry the eggs on ghee. I used these molds to create perfect shapes for the muffin. Cook the eggs until the egg white is opaque and the yolks are still runny. Season with salt and pepper and take off the heat.
- Cut the muffins in half and spread some butter on the inside of each of the halves.
- Top each with slices of cheese, egg, and mustard. Optionally, serve with greens (lettuce, spinach, watercress, chard, etc.) and bacon.
- Enjoy immediately!
- The muffins (without the filling) can be stored in an airtight container for up to 3 days.
