This might be the best Vegan cauliflower tacos I’ve ever come across. Being Vegan is sometimes regarded as boring and not flavorful, but, with the right ingredients you can whip up an amazing vegan recipe that would leave your mouth watery.

What does being Vegan mean?

Most people confuse vegetarians with Vegans. Let me decipher these two terms for you to understand, I promise I will make it as easy as possible.

Now, Vegetarians have a “plant-based” diet but they don’t eat meat. Meaning they can eat something that’s made from animal products, just NOT MEAT! Vegetarians can have milk, cheese, eggs, honey, and any other animal product as long as it’s not meat.

Vegan, on the other hand, don’t eat MEAT or any animal products. They are 100% strictly plant-based. They can’t even eat HONEY!

Okay enough of all that yapping, let’s get to the main agenda of today: making the best vegan Cauliflower tacos of your life. It’s Cheesy, Tasty, and Easy to make.

The Best Vegan Cauliflower tacos: Easy, Cheesy, and Delicious

Ingredients

  • 1  Cauliflower cut into florets
  • 2 Tortilla wraps
  • 1/4 tsp Smoked Paprika
  • 1/4 tsp Garlic powder
  • 1/4 tsp Ground cumin
  • 1/4 tsp Chili powder
  • 1 tsp Salt
  • 2 tsp Olive oil extra virgin
  • 1 can Red beans

For Cashew Cream

  • 1/2 cup Raw cashews Soaked over-night
  • 1 tsp Lemon juuce
  • 1/3 cup Noochy Licious (nutritional yeast)
  • 1/4 tsp Onion powder
  • 1 tbsp Plant-based milk

Instructions

  • Cut the cauliflower into florets and place in an oven pan
  • In a bowl place smoked paprika, ground cumin, garlic powder and chili powder. Mix together and add into the cauliflower
  • Add 1 teaspoon of salt and 2 teaspoons of olive oil
  • Mix all the ingredients together and roast at 450F for 25 minutes
  • In a blender add ½cup raw cashews, 1 teaspoon of lemon juice, 1/3 cup Noochy Licious, smoked paprika, ground cumin, garlic powder, chili powder, onion powder, 1 teaspoon sea salt and 1 tablespoon plant-based milk. Blend until smooth
  • Add 1 can of red beans to the cauliflower and roast for 5 more minutes
  • Top tacos with cauliflower and beans
  • Drizzle with cashew cream over the vegetables
  • Drizzle with cashew cream over the vegetables
  • Top tacos with cucumber and onions
  • Serve and enjoy!
