Garlic Press: To crush the garlic for the dressing, a garlic press is handy.

Ingredients
  

  • 2 heads of Romaine lettuce washed and torn into bite-sized pieces
  • 1/2 cup of grated Parmesan cheese
  • 2 anchovy fillets optional
  • 2 egg yolks
  • 2 cloves of garlic crushed
  • 1 teaspoon of Dijon mustard
  • 1/2 cup of olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste
  • Keto croutons

Instructions
 

  • In a blender or food processor, combine the anchovies (if using), egg yolks, garlic, mustard, olive oil, and lemon juice. Blend until smooth.
  • Season the dressing with salt and pepper to taste.
  • In a large salad bowl, toss the Romaine lettuce with the dressing until well coated.
  • Sprinkle the salad with the Parmesan cheese and keto croutons.
